FIRST, LET'S MAKE THE FILLING:
-
1 1/3 cups sugar
-
1/2 cup Gold Medal™ All Purpose Flour
-
6 cups sour cherries, pitted
In a large bowl, mix the sugar and flour together. Stir in cherries. Spoon into pastry-lined pie plate.
SECOND, MAKE THE CRUST
(Makes two 9" pie crusts)
-
2 cups sifted flour
-
3/4 tsp salt
-
2/3 cup shortening
Sift flour and salt together and cut in shortening with two knives. Add water slowly until mixture holds together. Divide dough in 2, roll out on a floured board.
THIRD, ASSEMBLE & BAKE
(Serves 8)
-
2 tablespoons butter, if desired
-
4-6 tb cold water
Line a pie pan with 1 of the pieces of rolled dough and add the filling. Cut butter into small pieces and sprinkle over cherries.
After filling is in place, dampen edges of crust with cold water. Use the second piece of rolled dough as cover; slice it in the middle and place on top to cover the filling. Press edges together with fork.
Bake at 350 degrees for 25 minutes, or 450 degrees for 10 minutes.
